Combine cashews, yogurt, tomato paste, vinegar, garam masala, coriander, ginger, red pepper, garlic and make a fine paste in a blender. Marinate the chicken with nut mixture and refrigerate overnight. Heat a pan over medium-low heat. Coat the pan with cooking spray. Add onion, cardamom, and cinnamon stick to pan; cover and cook 10 minutes. Next, add the chicken mixture and stir frequently. Add a little hot water, tomato puree, paprika, and salt and cook them until the chicken is soft. Garnish with fresh cilantro. Your cashew chicken is ready to be served.
